Lime Grilled Chicken with Steamed Veggie Medley

A flavorful, low-carb meal with juicy lime-grilled chicken breast strips and a medley of lightly seasoned green beans, peas, carrots, and corn. Quick, lean, and satisfying!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
Grilled Chicken:
1 chicken breast, cut into strips
1 tbsp olive oil
Juice of 1/2 lime (plus extra for serving)
1/2 tsp garlic powder
1/4 tsp paprika
Salt & pepper to taste
Veggie Medley:
1 cup green beans (fresh or frozen)
1/4 cup mixed vegetables (peas, carrots, corn)
1/2 tsp dried herbs (oregano or thyme)
Salt & pepper to taste
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Marinate the Chicken
Toss chicken strips with olive oil, lime juice, garlic powder, paprika, salt, and pepper. Let sit for 10–15 minutes.
2️⃣ Cook the Chicken
Grill or pan-sear chicken over medium heat for 5–6 minutes per side until fully cooked and slightly charred.
3️⃣ Prepare the Veggies
Steam green beans and mixed vegetables until tender (5–7 minutes). Season with herbs, salt, and pepper. Sauté briefly in a nonstick pan if desired.
4️⃣ Serve It Up
Plate chicken next to the veggies and serve with a wedge of lime for extra zing!
