Omega Boost Salmon Bowl with Avocado & Soft-Boiled Eggs

A nourishing and satisfying power bowl with flaky salmon, creamy avocado, soft-boiled eggs, and herbed rice. High in protein and healthy fats perfect for a balanced meal!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1 salmon fillet
1/2 avocado, diced
1/2 cup brown or white rice
1 cup water
2 eggs
1/2 tsp olive oil or butter (for cooking salmon)
1/4 tsp garlic powder
Salt & pepper, to taste
Optional: a drizzle of balsamic glaze on the avocado
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1. Cook the Rice
Rinse rice and cook with water and a pinch of salt. Bring to a boil, reduce heat, cover, and simmer for 15–18 minutes (white rice) or 35–40 minutes (brown rice). Fluff and set aside.
2. Prepare the Eggs
Bring water to a boil. Gently lower in eggs and boil for 7 minutes. Immediately transfer to an ice bath, peel, and slice in half.
3. Cook the Salmon
Season salmon with garlic powder, salt, and pepper. Heat oil in a pan over medium heat. Sear salmon for 3–4 minutes per side or until cooked through and flaky.
4. Assemble the Bowl
In a bowl, arrange the rice, flaked salmon, soft-boiled egg halves, and diced avocado. Drizzle balsamic glaze over the avocado if using.
