Mediterranean Lentil Power Bowl

A hearty, nourishing bowl featuring seasoned lentils, soft-boiled eggs, creamy avocado, sautéed spinach, blistered cherry tomatoes, and crispy halloumi. Balanced and flavor-packed!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1/2 cup cooked green or brown lentils
1–2 eggs, soft- or medium-boiled
1/2 avocado, sliced
1/2 cup cherry tomatoes
1/2 cup baby spinach
1/3 cup halloumi, cubed
1 tsp olive oil (for sautéing)
Salt & pepper to taste
Optional: lemon juice, parsley, or za'atar for garnish
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Prepare the Lentils
Season cooked lentils with olive oil, salt, pepper, and chopped fresh herbs like parsley or mint. Set aside warm or at room temp.
2️⃣ Cook the Eggs
Boil eggs for 6–7 minutes for a soft center. Peel and slice in half.
3️⃣ Sauté the Spinach
In a small pan, wilt spinach with a touch of olive oil and a pinch of salt (1–2 minutes). Drain any excess liquid.
4️⃣ Blister the Tomatoes
In the same pan, cook cherry tomatoes on high until blistered and just bursting (3–4 minutes). No stirring needed!
5️⃣ Fry the Halloumi
Add halloumi cubes to a nonstick pan and cook until golden on both sides (2–3 minutes per side).
6️⃣ Assemble the Bowl
Add lentils as your base, then arrange eggs, avocado, spinach, tomatoes, and halloumi around the bowl. Top with fresh herbs, black pepper, or a squeeze of lemon.
