Rotini Pasta with Shredded Chicken & Veggies

A hearty and flavorful mix of rotini pasta tossed with shredded chicken, green beans, red peppers, and leafy greens. A quick, nutritious dinner bowl full of texture and warmth!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1 cup rotini pasta
1/2 cup cooked shredded chicken
1/2 cup green beans, chopped
1/4 cup red bell pepper, chopped
1 handful spinach or kale
1 clove garlic, minced
1 tbsp olive oil
Salt & pepper to taste
Optional: red chili flakes or Italian herbs for extra flavor
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Boil the Pasta
Cook rotini in salted water until al dente. Drain and set aside, reserving a splash of pasta water.
2️⃣ Sauté the Veggies
In a large pan, heat olive oil. Add garlic, green beans, and red peppers. Cook for 5–6 minutes until tender. Toss in spinach and stir until wilted.
3️⃣ Add Chicken & Combine
Stir in shredded chicken and cooked pasta. Add a bit of reserved pasta water if needed for moisture. Season with salt, pepper, and any herbs/spices you like.
4️⃣ Serve Warm
Plate immediately and top with chili flakes or Parmesan if desired.
