Sweet Potato Power Bowl with Eggs, Avocado & Pickled Onion

A colorful, wholesome bowl featuring roasted sweet potatoes, sautéed greens, creamy avocado, pickled red onions, and perfectly boiled eggs topped with chili flakes for a zesty kick!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
1 small sweet potato, diced
1 tsp olive oil
1/4 tsp paprika or chili powder
Salt & pepper to taste
1 cup baby spinach (or kale)
1/2 avocado, sliced
1–2 eggs, soft or medium-boiled
1/4 cup pickled red onion (or quick-pickled: red onion + vinegar + salt)
Optional: chili flakes & chopped herbs (parsley or cilantro)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Roast the Sweet Potatoes
Toss diced sweet potato with olive oil, paprika, salt, and pepper. Roast at 400°F (200°C) for 20–25 minutes until tender and caramelized.
2️⃣ Cook the Eggs
Boil eggs for 6–7 minutes for soft centers or 9–10 minutes for firm yolks. Cool and peel.
3️⃣ Sauté the Greens
Lightly sauté spinach in a small pan with olive oil and a pinch of salt until just wilted (2–3 minutes).
4️⃣ Assemble the Bowl
In a bowl, layer roasted sweet potatoes, sautéed greens, sliced avocado, halved eggs, and pickled onion. Top with chili flakes and chopped herbs.
