Grilled Chicken with Steamed Veggie Medley on Lettuce

A wholesome plate featuring juicy grilled chicken breast paired with crisp, lightly steamed vegetables over a bed of fresh lettuce. Simple, lean, and satisfying!
𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬:
For the Chicken:
1 boneless chicken breast
1 tbsp olive oil
1/2 tsp garlic powder
Salt & pepper to taste
Optional: lemon juice or herbs for garnish
For the Veggies:
1/2 cup broccoli florets
1/4 cup cauliflower florets
1/4 cup sliced carrots
1/4 red bell pepper, sliced
1/4 cup cherry tomatoes
Lettuce leaves (romaine, butter, or leaf)
𝐃𝐢𝐫𝐞𝐜𝐭𝐢𝐨𝐧𝐬:
1️⃣ Grill the Chicken
Rub chicken with olive oil, garlic powder, salt, and pepper. Grill or pan-sear for 6–7 minutes per side until fully cooked and lightly charred. Let rest before slicing.
2️⃣ Steam the Veggies
Steam broccoli, cauliflower, and carrots until just tender (5–6 minutes). Quickly sauté bell pepper and cherry tomatoes in a splash of olive oil if desired.
3️⃣ Assemble the Plate
Lay fresh lettuce on a plate or container. Place grilled chicken and veggie medley on top. Garnish with extra pepper or a drizzle of lemon juice.
